Catch Your Dinner in Fish Market

A fish dinner seems one of the most difficult meals for some housewives to plan, even where they and their families happen to be fond of seafood. To them my advice is, don't sit at home trying to figure out what to serve as the main course. Visit the fish market, look around and compare prices before deciding.

There are 160 fish and shellfish varieties available in the United States. That's a lot of fish. Even if all kinds are not in season at the same time, there always is something new on hand. The best place to refresh one's memory as to the kinds of fish and ways of preparing them obviously is where fish is sold.

Here are some tasty fish recipes you may not have tried before:

Oyster Pancakes

3/2 cups mashed potatoes 2 tablespoons melted butter 1 egg, slightly beaten 2 dozen oysters 1 tablespoon flour 1/2 teaspoon salt Dash of pepper 1 teaspoon paprika 1 tablespoon chopped parsley

Beat mashed potatoes until light with butter and slightly beaten egg. Chop oysters, adding enough juice to make 1 cup if necessary. Combine potato mixture with oysters, adding flour a little at a time, salt, pepper, paprika and parsley, folding the mixture to keep it light. Drop in spoonfuls into hot cooking oil to brown golden. Serve with a watercress garnish.

Fish Pie

2 cups flaked fish, well salted 2 cups thick white sauce 1 teaspoon Worcestershire sauce 2 teaspoons onion juice 1 teaspoon lemon juice 2 cups mashed potatoes 2 tablespoons melted butter 1/2 cup fine bread crumbs 2 tablespoons grated cheese

Mix together fish (this may be made with salmon, haddock fillet or sole), white sauce, Worcestershire sauce, onion juice and lemon juice. Smooth potatoes over top. Sprinkle with mixture of butter, bread crumbs and grated cheese. Bake in moderate oven (375 degrees F.) 20 minutes or until nicely browned.

Shrimp Pudding

6 slices bread 3/2 cups shrimp 1/2 cup grated cheese 3 eggs 3 cups milk 1 teaspoon salt 1/4 teaspoon paprika 1/8 teaspoon pepper

Butter bread; cut into cubes. Put half the bread cubes in greased baking dish, add half the shrimp, all the cheese, (add rest of shrimp and bread cubes. Mix eggs and milk; add salt, paprika and pepper. Mix well, and pour into baking dish. Set dish in pan of hot water and bake in slow oven (325 degrees) like custard (about 40 minutes). It is done when knife blade comes out clean.
