Ingredients 1/2pound fresh or thawed orange roughy or other frozen fish fillets 3-3/4cups water, divided six ounces raw medium shrimp, peeled and deveined 1 cup chopped onion 1/2cup chopped 2cloves pepper green pepper garlic, minced fish or chicken bouillon granules 1/2teaspoon 2ch (about 14 ounces each) no salt added stewed tomatoes 1-1/2cups frozen okra, thawed 1teaspoon dried thyme dried salted 1teaspoon 1/4teaspoon red ground black pepper 1/8teaspoon 2tablespoons 2tablespoons starch corn pepper finely chopped lean ham 96% 2cups hot cooked brown rice Preparation: 1.Remove and discard the skin of fish, fish cut into 1-inch pieces. Bring 3 cups water to boil in medium saucepan over high heat. Add fish and shrimp and cook 3-4 minutes or until fish flakes easily with fork and shrimp are opaque. Drain and set aside. Mix onion, green pepper, 1 / 2 cup water, garlic and broth in large saucepan. Bring to a boil over medium-high heat, reduce to medium-low. Cover and simmer 2-3 minutes or until the vegetables are tender-crisp. 2.Stir in tomatoes, okra, thyme, salt, red pepper and black pepper. Return to boil, reduce fire. Simmer, uncovered, 3 to 5 minutes or until okra is tender. Combine remaining 1 / 4 cup water and cornstarch corn in a small bowl. Stir into gumbo. Cook and stir over medium heat until boiling and thickened. Cook and stir 2 minutes more. Add fish, shrimp and ham, heat through. Serve over rice.
