fried fish and chips?

I'm looking for a pub-style fish and chip fry recipe. I've tried beer-battered and luisiana dry mix....I'm looking for a true Pub "Fish N Chip" recipe

Beer batter IS traditional pub style.

We used to make it with a premade fish batter mix and then add half a pint of ale and water to it, but all the mix was made up of was refined flour and a bit of cornflour.

It's important to coat the fish in the dry batter mix first then make the batter thick enough to stick to it. When you put the fish in the fryer hold it up from the bottom for a few moments so when it drops it doesn't stick to the bottom.

For the chips, don't batter them, but use Maris Piper potatoes (any floury potato will do, these are usually the 'dirty' potatoes you get in big bags) NOT waxy ones (eg the ones with red skins).
Chip them and leave them to soak in a bucket of cold water for a few hours. If you are rushed you can microwave them for a short time to make them soft, that way they will fry quicker and have a better texture.
