How to batter catfish?

I'm looking for a quick and easy way to batter my catfish. I've never cooked up catfish before but it was on sale at WalMart so I figured I'd give it a try.

All of the recipes I've located online seem to be "beer battered" and I have never been a fan of beer-battered fish.

Can anyone suggest an alternative?

Cornmeal-Crusted Catfish ---

INGREDIENTS
1 egg, lightly beaten
2 tablespoons lemon juice
1/2 cup all-purpose flour
1/4 cup yellow cornmeal
1 teaspoon Cajun seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
4 (6 ounce) fillets catfish
3 tablespoons vegetable oil

DIRECTIONS
In a shallow bowl, combine the egg and lemon juice. In another shallow bowl, combine the flour, cornmeal, Cajun seasoning, garlic powder and salt. Dip catfish into egg mixture, then coat with cornmeal mixture.
In a large skillet, heat oil over medium heat. Fry fillets, two at a time, for 5-6 minutes on each side or until fish flakes easily with a fork.

Crispy Catfish ---

INGREDIENTS
3/4 cup finely crushed saltines
1 teaspoon seasoned salt
1/2 teaspoon celery salt
1/2 teaspoon garlic salt
4 (8 ounce) fillets catfish
1/3 cup butter or margarine, melted

DIRECTIONS
In a shallow dish, combine the first four ingredients. Pat fillets dry; dip in butter, then coat with crumb mixture.
Coat grill rack with nonstick cooking spray before starting grill. Grill fillets, covered, over medium-hot heat for 10 minutes or until fish flakes easily with a fork, carefully turning once.

Cajun Pecan Catfish ---

INGREDIENTS
1 pound catfish fillets
2 tablespoons olive oil
1 tablespoon McCormick® Gourmet Collection® Cajun Seasoning
2 teaspoons lemon juice
1 teaspoon McCormick® Gourmet Collection® Thyme Leaves
1/3 cup finely chopped pecans
2 tablespoons grated Parmesan cheese
1 tablespoon dry breadcrumbs
1 tablespoon McCormick® Gourmet Collection® Parsley Flakes

DIRECTIONS
Preheat oven to 425 degrees F. Coat a shallow baking pan with nonstick cooking spray; place fish in pan.
Combine oil, Cajun seasoning, lemon juice and thyme in a small bowl. Spoon or brush half the mixture over fish.
Add pecans, Parmesan cheese, breadcrumbs and parsley to remaining oil mixture; mix well. Spoon onto fish and spread evenly. Bake 10 to 15 minutes (depending on thickness of fish), or until fish flakes easily with a fork. If desired, garnish with lemon.
