How do you prepare Japanese Breaded Chicken/Pork Chop and Curry?

I like to eat Japanese curry with fried porkchicken chop.How do they fry it until they look so delicious( as in golden brown) in color?Do i need to invest in a special deep fryer?coming to which,how do you deep fry anything anyway?so that it looks crispy and nice on the otside,but soft and moist on the inside?the same for fish and chips...?Anyway ..recipes are always welcome.Especially the curry bit.Japanese curries are nice.I kinda like their slightly mild curry taste.Compared to hard core indian stuff...Thanks in advance

Breaded Fried Chicken/Pork Chop

Ingredients
3 boneless chicken/porkchops
salt and pepper
3 tablespoons {flour}
1 egg beaten
1 cup of breadcrumbs
vegetable oil
cabbage{1/4}
cherry tomatoes

Instructions
sprinkle the chops with salt and pepper. Dust the chops with flour , dip in the beaten egg and coat with the breadcrumbs. Heat vegetable oil 1 inch deep in a frying pan to 340 F. Fry the chops until golden brown. Drain on paper towel ,cut each into 1-inch wide sides. Arrange on a serving platter and garnish with a shereded cabbage and 2-3 cherry tomatoes, serve hot with the Worcestersshire sauce or mayonnaise.

Japanese Curry (Kare)
Ingredients:
1 tablespoon oil
1 pound beef (cut into bite sized pieces)
2 onions (chopped)
1 sweet potato (grated)
* beef broth (or water)
2 carrots (cut into bite sized pieces)
2 potatoes (cut into bite sized pieces)
1 sweet apple (grated)
1 tablespoon honey
1 box Japanese curry roux

Directions:
1. Heat the oil in a large pot.
2. Add the beef and brown the beef on all sides.
3. Set the beef aside.
4. Add the onions and saute until soft.
5. Add the beef and cover in beef stock.
6. Bring to a boil, reduce the heat and simmer until the beef is fall apart tender, about 1-2 hours.
7. Add the carrots, potatoes, apple, honey and curry roux.
8. Cover in beef stock.
9. Stir until the curry roux is fully dissolved.
10. Bring to a boil, lower heat and simmer until the vegetables are tender, about 20 minutes
